Zucchini Bread

It's that time of year again. For my favorite Zucchini Bread Recipe!! My sister-in-law, Stacey, gave me this recipe a few years back. It's from her Grandma Vickery. It's so yummy. I've got some in the oven right now and it smells so good.
3 eggs
2 cups sugar
3 cups flour
3 TBS. cinnamon
1/4 tsp. baking powder
1 cup oil
1 tsp salt, soda, vanilla
1/2 cup nuts (I use pecans)
2 cups raw, grated zucchini

Beat eggs in large bowl and add all other ingredients-except the zucchini, add it last. Mix well. Pour into 2 greased loaf pans. Bake @ 325' 50-55 mins.
optional- 1/2 cup raisins
1/2 cup chocolate chips

Tina's note: I like to make a double batch and spoon the batter into 3 loaf pans. It makes bigger loaves this way.

Isn't that the "secret" recipe Like the one to your cookies or sonya's cake?

BTW I like the name...It makes me think of a little kids Christian song that I used to sing as a kid.

Sounds yummy! We love zucchini bread..my Eli doesn't realize he is eating a veggie;) I am going to use your recipe. Thanks for sharing!!
