Zucchini, Zucchini, Zucchini!!!

Kasey left to go to Chicago yesterday and I had no idea of what I was going to do to occupy my time (and the boys') while he was gone. He had just been out of town the night before as well so we had already done all of our normal "dad's out of town" activities. :) We had no idea that is, until we were invaded by lots and lots of zucchini.
Aaron brought me a loaf of zucchini bread that Stacey had made and also brought me a bag of zucchinis from his grandpa's garden for me to make more zucchini bread. Stacey has this awesome recipe from her Grandma Vickrey and the bread is so yummy. So I had planned on shredding up lots of zucchini and freezing it so that I could make this yummy treat all winter long. I had a bag of zucchini in the fridge from a few days ago, Aaron brought me a bag, then my mom stopped by with LOTS of bags of zucchini. Seems someone at her work thought I'd like to have "some" zucchini. So mom and I spent the evening at her house with my boys making bread. Thankfully she has a food processor which makes the shredding process so much easier. I usually just shredd it with a grater. After making a spaghetti dinner we were set to dive in to many many bags of zucchini. She shredded while I mixed and baked. When all was said and done we had made 10 big loaves of zucchini bread and 2 loaves of amish white bread (just for good measure). We also froze individual bags of shredded zucchini for a fun baking day to come. Thanks mom for a fun (fattening) time. Love you tons! Grandma Vickrey's Zucchini Bread
3 eggs
2 c. sugar
3 c. flour
3 T. cinnamon
1/4 tsp. baking powder
1 c. oil
1 tsp. salt, soda, vanilla
1/2 c. nuts (opt.)
2 c. raw zucchini, peeled, deseeded, grated (you can leave on the peeling if it is fresh; check for freshness by seeing if you can stick your nail into the peeling easily)
1/2 c. chocolate chips or 1/2 c. raisins opt. (I've never tried chocolate chips and I don't care for raisins but walnuts or pecans taste great to me).
Preheat oven. Beat eggs together in a large bowl; add all other ingredients except zucchini; add it last. Mix well. Pour equally into 3 (or 2 for bigger loaves) well greased bread pans. Bake at 350' for 50-55 minutes.
